These have been on my mind ever since I saw a tray of non-vegan rice crispy treats in the fridge of my student kitchen. I decided to make my own as the original was made with the classic Rice Krispies cereal and all smothered in melted Mars Bars, as good as it looked, I thought I’d try making a less sugary version. That way you could eat more and not feel guilty about it… obviously!
So these chocolate covered rice crispy treats were made using only 4 ingredients (with 2 optional ingredients)! The main ingredient is regular unflavoured puffed rice which replaces what would usually be the Rice Krispies cereal. The recipe is super simple just like the original and ends up being a delicious treat that can be enjoyed in moderation!
- 2 cups unflavoured puffed rice
- 200g vegan dark chocolate (the better quality, the healthier!)
- 2 tablespoons coconut oil
- 2 tablespoons maple syrup
- Optional: 1 tsp vanilla extract
- Optional: pinch of Pink Himalayan Salt
Preheat your oven to 200 celsius/390 fahrenheit
Pour the two cups of puffed rice into a large bowl. In a smaller bowl combine the coconut oil, maple syrup, and vanilla extract, and place in the microwave for 30 seconds to a minute until the ingredients are well combined. Stir the mixture together with a spoon before stirring it into the puffed rice.
Place the puffed rice mixture onto a baking tray lined with baking paper, and spread evenly before placing it into the oven. Bake the puffed rice in the oven for 10-15 minutes, until the puffed rice has turned slightly golden brown. Once the mixture is done baking, take the baking tray out of the oven and allow to cool for 5 minutes while the puffed rice turns crispy.
Break the dark chocolate into pieces and place into a bowl. You can either melt the chocolate by using the water bath method, or you can microwave the chocolate in 30 second intervals until it completely melts, making sure to stir it regularly to avoid burning.
Transfer your crispy puffed rice back into the large bowl, and pour over the melted dark chocolate. Stir together the ingredients until the puffed rice is evenly covered. Transfer the mixture onto a shallow baking dish lined with baking paper. I like to sprinkle over a pinch of Pink Himalayan Salt to add to the flavour of the treats, although this step is completely optional.
Place the dish into the fridge for approximately 20 minutes to cool down and solidify before cutting it into square pieces and serving.
