It’s been a hot minute since I’ve posted on the blog but I am back and I am bringing you one of my Fall favourites, which is this gorgeous Sun-dried Tomato Hummus. Since attempting to decrease my consumption of plastic, I have started trying to regularly make my own hummus as to avoid buying the store bought ones that come in little plastic containers. I’ve honestly been loving making my own hummus completely from scratch as I am able to make huge batches for a fraction of the cost of the hummus I used to buy. So I have decided to share this recipe with you guys as it has quickly become one of my favourites to have as a snack on rye bread.
- 300g of chickpeas (pre-cooked or from a can)
- 2 large cloves of garlic
- 5 tablespoons of olive oil
- Juice of 1 lemon
- 3 tablespoons tahini
- 3 teaspoons ground cumin
- 5-7 large pieces of sun-dried tomato (soaked in oil or hot water)
- 1 tablespoon of tomato paste
- 1/4 tsp of pink himalayan salt
- A pinch of ground black pepper
Place all of your ingredients into the blender and blend until you get a smooth and fluffy consistency. Keep tasting your hummus as you go along and feel free to play around with the measurements. The key here is to have fun while you’re at it but be careful not to end up eating half the hummus out the blender before you are done!
I personally love having this hummus on some rye bread with some freshly chopped cherry tomatoes covered in basil, garlic granules, and a sprinkle of black pepper. It’s kind of like having a more juicier bruschetta! Hope you enjoy it!
